South Indian Payasam

  1. 1/2 cup medium grain basmati rice
  2. 2 cups water
  3. 1 1/2 jaggery or brown sugar
  4. 2 1/2 tablespoons ghee or clarified butter
  5. 3 tablepoons raisins
  6. 1 tablespoon cashews

Wash the rice twice to remove all the starch. Combine rice and 2 cups of water to a pot on a high flame and bring to a boil. Reduce the heat to low and simmer until the rice is cooked, about 15 minutes.
Add the jaggery or brown sugar and 2 1/2 tablespoons of ghee and let the mixture simmer, stirring continiously until the mixture starts to thicken to thick custard like consistency, about 10 minutes.
Garnish with raisins and cashews and serve hot or cold.
