Bamboo Sabzi

  1. 1 pound russet or red boiling potatoes, peeled and boiled
  2. 1/4 cup All purpose flour
  3. 1 cup semolina
  4. 2 Green chilies such as serrano, seeded and finely chopped
  5. 1 medium Spanish onion, finely chopped
  6. 1 teaspoon toasted cumin powder
  7. 1 teaspoon Cayenne Pepper
  8. 1/2 cup Cilantro
  9. Salt to taste (about 1 teaspoon, usually)
  10. Vegetable oil for frying

Step 1

Mash the potaotes To prepare these lip-smacking patties, first, in a pan add potatoes with water and bring it to boil. Once the potatoes boil completely, transfer in a bowl and let it cool down. Meanwhile, bring a chopping board and chop onions, cilantro and green chillies. Now, mash the cooled potatoes in a bowl. Keep aside until needed next.

  • Mix all ingredients and prepare patties Next, to the mashed potatoes add cumin powder, pepper, salt, cilantro, chopped onions and green chillies. Mix all the ingredients very well. Add in semolina and all-purpose flour. Now, take small portions of this mixture and shape them into small patties. Cover and store these patties in the refrigerator for at least 15-30 minutes.

    Fry the patties Finally, heat oil in a pan kept over medium flame. Once the oil heats sufficiently, gently drop in the prepared patties. Fry the patties evenly on both sides until they appear golden and crisp.

    Step 4

    Serve hot Once done, take out on an absorbent paper and serve hot with chutney or ketchup.
